Yamón is a district in the Amazonas region of northern Peru, tucked into the Andes at 1,600 to 1,800 metres. The combination of altitude, cloud cover, and fertile mountain soil creates slow-maturing cherries with concentrated sugars. That natural sweetness is what gives Drink Decaf its caramel finish.

JUMARP El Palto Cooperative

We source from the Asociación de Productores Cafetaleros Juan Marco El Palto, known as JUMARP. A cooperative of 189 small-scale family farmers in the Yamón district. Each plot is hand-farmed, hand-harvested, and traceable to the producer level. Drink Decaf is built on that traceability, not on commodity blends.

Each individual plot averages 2 to 3 hectares, small enough that every tree gets direct attention from the farmer who owns it. At that scale, farming is personal. The quality of each lot reflects the decisions of one family, not an industrial operation.

JUMARP holds dual FTO certification, Fair Trade and Organic, verified independently by FLOCERT, the ISO-accredited inspection body for Fairtrade products. Fair Trade guarantees a minimum floor price above commodity levels and a Fairtrade Premium paid directly to the cooperative for community investment. Organic certification confirms no synthetic pesticides, herbicides, or fertilizers on the farms. Both audited annually. Drink Decaf sources only from this certified lot.

High altitude means lower temperatures and slower cherry development. The bean takes longer to mature, building more complex sugars and organic acids. JUMARP farms sit in the 1,600 to 1,800 metre band, the sweet spot for specialty-grade Arabica in northern Peru. That slow maturation is the foundation of everything in the Drink Decaf cup.

The Amazonas highlands sit inside a cloud forest zone with consistent morning mist, afternoon sun, and cool nights. That temperature swing between day and night concentrates the cherry's sugars. The JUMARP farms grow under a native tree canopy in the Amazonas cloud forest. That shade slows cherry maturation beyond what altitude alone achieves. Cooler temperatures and reduced UV exposure give the cherry more time to bond amino acids with sugars, producing deeper caramel notes, smoother body, and the complex stone fruit character that defines Drink Decaf. The same canopy prevents soil erosion, maintains bird habitat, and stores carbon, keeping the cloud forest ecosystem intact for future harvests. Slower growth, more complexity, and a cup that is better because the forest is still standing.

Peru's main harvest runs from April through September. We buy in small lots after the harvest cup, selecting only batches that score 83 points or above. Buying after cupping rather than on forward contract means we never accept a mediocre lot into a Drink Decaf bag.

Hand-Harvested

Every cherry at JUMARP is hand-harvested. Producers return to each tree multiple times during the harvest window, picking only fully ripe cherries. It is slower and more labor-intensive than mechanical harvesting. It is the only way to guarantee the cherry consistency that Drink Decaf depends on.

Fully Washed

After harvest, the cherry skin and fruit are removed and the beans are fermented in water tanks before drying. Fully washed processing produces the cleanest, most transparent cup. Every flavor you taste in Drink Decaf comes purely from the bean itself.

Raised Drying Beds

After washing and fermentation, the beans are spread on raised drying beds and dried in the open air under the Amazonas sun. Raised beds allow airflow above and below the bean layer, drying more evenly than patio drying on concrete. Even drying means consistent moisture content across the lot, which directly affects roast consistency and shelf stability. The JUMARP cooperative uses this method as standard for their washed lots.

Four designations that define what goes into every Drink Decaf bag. FTO: Fair Trade Organic, dual-certified by FLOCERT. Grade 1: zero primary defects per 350g sample, the highest SCA classification, reserved for roughly 3% of global coffee production. SHG: Strictly High Grown, cultivated above 1,200m. The JUMARP farms at 1,600 to 1,800m exceed that by a significant margin. EP: European Preparation, hand-sorted after machine sorting to remove any defect the machines miss. Together these four mean the bean is traceable, clean, dense, and individually inspected before it reaches the roaster.

Green coffee is graded through sieves measured in 64ths of an inch. Screen 15 means the bean is at least 15/64 inch in diameter. The JUMARP EP preparation removes anything below screen 15, resulting in lots clustering at screen 15 and 16. Larger, more uniform beans extract more evenly, which matters particularly for espresso where grind consistency and extraction pressure amplify any size variation in the bed.

The JUMARP beans carry a bright, clean acidity with blueberry and lemon notes on the pull. Natural acidity in coffee provides the clarity and liveliness that separates a flat cup from an expressive one. The dark roast mellows it into sweetness without removing it entirely. Body refers to the weight and texture of coffee on the palate. A full-bodied cup feels dense and coating, not thin or watery. This matters especially in milk-based drinks: the body holds through steamed milk. It is why Drink Decaf works in a flat white, not just a long black.

Drink Decaf is actually specialty grade coffee. Every lot scores 83 points or above on the SCA 100-point scale. We cup every batch with our roaster before committing. Anything below that threshold does not go into a Drink Decaf bag.

Drink Decaf gets the caffeine removed with the Swiss Water Process, a chemical-free method. The process strips 99.9% of caffeine using water and a carbon filter. No solvents. No chemicals. The flavor compounds stay intact.

Drink Decaf beans come from the Yamón district in the Amazonas region of northern Peru. They are grown by JUMARP El Palto Cooperative, a group of small-scale family farmers at 1,600 to 1,800 metres altitude.

Drink Decaf gives almost no taste difference from regular espresso, and most people cannot tell. The JUMARP Arabica has natural sweetness, bright acidity, and full body. Swiss Water Process preserves those compounds. The result tastes like specialty coffee, not a compromise.

Drink Decaf holds approximately 2 to 5mg of caffeine in each cup. A regular espresso shot carries 60 to 90mg. Swiss Water Process removes 99.9% of the caffeine before roasting.

Drink Decaf works in milk-based drinks. The JUMARP Arabica has enough body to hold through steamed milk. It pulls as a flat white, latte, or cortado without tasting thin or disappearing behind the milk.
